Someone pinch me, even if it has been intermittent, but the sun has actually been shining here in the west of Ireland lately………….We have had more sun in the last few weeks, than we have had in the last few years! Starved of that precious Vitamin D, left frustrated and pale, without ever using our barbeques, lilos and long forgotten sundresses……….if they sill fit us that is, we would be forgiven for thinking the Sun Gods had abandoned us forever… so to celebrate Summer and all that goes with it, I have made a few Summertime resolutions…………..Here are some of them
- Take down and write a diary in the beautiful writing book my Mother gave me, fill it with the Summer, days in the garden, hours on the beach, trips by land, sea and air (hopefully), fill my blank pages with Summer recipes, photographs of laughing children and precious memories of the Summer of 2013. I forget to write, and often wish I had a notebook to hand when needed, well now along with the camera and that sandwich I never leave home without (good advice from sister Fi) I will carry my strong, elastic band encased diary with me where ever I go………
- To eat outside at least once a day, under the awning which I’m thrilled to say is now a permanent feature of our outside dining area, flapping in the wind.
- To cook more dishes from the ever increasing stash of beautiful food books I am accumulating…………
- Sipping appropriate Summer cocktails, a must too, of course, never let it be said……….Sangria anyone?
So supper this evening was Fresh Pasta, Calamari, just picked Mange-Tout, and a lovely Pepper and Tomato salsa, I knocked up. The last 3 resolutions adhered to for starters……….La Dolce Vita.
