Spring Green Dressing

Craving greens, the new shoots of Sorrel, Cleavers, Wild Garlic and Dandelions were just emerging from their dark earthly beds, providing much welcome vitamins and minerals to kick start January.

This simple dressing is made from a couple of handfuls of new greens, rinsed and whizzed with lemon juice and good olive oil. Add a pinch of salt to taste.

So good drizzled over roast veg, salad, sourdough or pasta. Keep in the fridge for a few days if needed.
